Day 23

Today I am just going to be at the restaurant all day as usual. I am scheduled to work front of the house in the morning. I think I am supposed to go in at 10, but of course I got there by 7 just because I like depriving myself of sleep and I want some hours. The advantage of getting here early is that no one will actually notice that I am supposed to be working front of the house. I just started helping out in the back right away doing dishes and prepping stuff for the morning European Cuisine class to use. That's just how I spent my morning. Working as much as I can and hiding from front of the house duties. Its easy to get away with since I think they like me working in the back of the house since I get a lot done. At least I get to do some interesting stuff. The full time interns say that I've earned my keep now so I can start watching them and helping on the hot line and with actual dishes in the restaurant. I spent some time watching them do a few tickets so I can see how they plate some of the dishes and what goes with what. It will take me a while to memorize everything. I gave up working at about 1 pm so we could eat lunch. Afterwards it was time to wait for our turn for European class. The subject was Central Italy today. Chef prepared a menu for us and we planned on getting done pretty quickly because we only had about 3.5 hours until we had a wine tasting class. We would be using a lot of leftovers today. We had some extra pasta dough from the morning class and some ground turkey that had to be used up. We ended up making canneloni, rolled pasta with the filling inside and then we lined them in a sheet pan and covered them with an eggplant sauce and some bechamel with cheese on top. It ended up being very good. We also made bruschetta, some cake for desert and the star of the day was large t-bone steaks for all of us. Chef had gotten a whole piece of veal that had to be broken down in to t-bones. So one of the students carved it up with the biggest cleaver I've ever seen and then we marinated the steaks in olive oil, rosemary and lemon. Steak was something we were all missing by this point, we have barely seen any beef while we have been eating over here and definitely not any steak. It was awesome. We cleaned up after dinner and we had wine tasting class as well. We covered Southern Italian wines today and there were a few that I thought were great, the others were probably a bit too bitter for me to want to drink. After we were done for the day I went home to finish up some homework and then get some sleep finally, at least I would actually be able to sleep in till 7 tomorrow.
